Tomato With Goat Cheese and Fresh Tarragon Salad

Here is another easy salad to whip up. Garden fresh tomatoes and tarragon make this a blissful dish. It's a lovely switch from the classic Italian fresh mozzarella and basil salad. It's another salad to help use all those fresh tomatoes that haven't been canned or cooked into a sauce yet in summertime when you just can't find enough recipes to get rid of all those homegrown tomatoes.

It's really that French-twist-meets-Italian-delight. The Italians know what they are doing in the kitchen as do the French. Why not explore them together in a salad?

The French are very 'goat cheese' oriented. It's quite a delicacy here where you can easily find quite a variety (over a hundred?) home-made and artisanal. Go to any country French market and there will a little vendor selling her few chunks of home-made goat cheese for immediate purchase. She probably just lives a few miles down the road. So the concept of made right-round-the corner is truer than you could imagine.
Perhaps this is why the French relish their goat cheese and use it frequently in their dishes and cooking. It does work well in salads and it bakes up nicely.

Here, I've added the fresh tarragon, another real French classic. It really is quite a French love. Tarragon is to the French what Basil is to the Italians in my opinion. As is the goat cheese is to the French what the mozzarella is to the Italians. So this really is Franco-Italian bliss in a salad.

As you can see by the recipe, it's easy to put together. It's can be served as a starter course or as a main course salad with bigger portions. Add some really good bread from the bakery and a summer meal is quick, refreshing and light.

Tomato with goat cheese and fresh Tarragon salad

It's optional to prepare this salad on individual plates or in a large bowl that you can layer the ingredients in order as presented then toss when ready to serve. Putting the salad together and letting the flavors mellow together does improve the flavor.

  • 4 large garden tomatoes (if possible)
  • 4 oz. crumbled goat cheese, or any leftover goat cheese on hand
  • 3 tablespoons olive oil
  • ½ cup fresh tarragon, finely snipped
  • salt and pepper to taste

Cut tomatoes into small wedges, add to salad bowl. Crumble in cheese, drizzle with olive oil, salt, pepper and Fresh tarragon. Toss gently. Chill until ready to serve. Toss again before serving.
